The Levante retarder-prover cabinet offers precise and flexible management of the leavening process, allowing bakers to optimize work times and avoid inconvenient hours. Thanks to a water connection system, it allows you to manage both leavening and retarder-prover, optimizing the process and improving the quality of the dough. In fact, the equipment precisely controls and optimizes the leavening process, in the most absolute guarantee of hygiene and quality, ensuring more intense aromas and a superior fragrance compared to traditional methods. An advanced microprocessor regulates the entire cycle, with the possibility of slowing down, blocking or restarting the leavening based on production needs. The process is divided into 5 phases: block, maintenance, awakening, leavening and delayed baking, ensuring perfectly developed doughs ready to be baked at the desired time. The Levante proofing retarder cabinet is available in two configurations: Lev1 (capacity up to 20 600x400 mm trays) and Lev2 (up to 40 600x400 mm trays or 20 600x800 mm trays). The intuitive touch screen facilitates use and monitoring of the phases, making Levante an indispensable ally for optimizing work and improving the quality of baked products.
